Kicking Horse student cooks win big at Missouri Food Fair contest
Kicking Horse Job Corp Center's six students who are studying culinary arts travelled to St. Louis, Missouri, the last week of June to compete in the annual Food Fair where they won "hands down", taking first place honors in five of six categories.
The young chefs scored 497 points out of a possible 500 points allowing them to win prizes for sanitation, best
centerpiece, overall table display, a travelling trophy and first place overall. The only category they didn't win was the written "competency" test in which they were three points short of tying for first place.
KHJCC's Lettie Neuman, who was a hostess at the Food Fair, said the Kicking Horse cooks were repeatedly complimented for their "maturity, friendliness, organization and their apparent control over the situation."
"I'm so proud of them, I just can't believe it!" said center director Virgil Clairmont. "It's a very tense time, but
these [students] were standing in the kitchen laughing around. They knew what they were doing."
The team was judged for its organization, appearance of the food, the taste and every step made in preparing the food. Judges watch for any flaws or panic situations. They also watch closely to see that the kitchen and food stays very sanitary. "The sanitation award is the hardest to win," said Neuman. "The Kicking Horse cooks were very calm, though, and wiped every little thing they touched."
